EGGPLANT TARTARE
Andrea Perini the "oil chef" at Al588 restaurant in Bagno a Ripoli , Tuscany, tells us about a recipe based on his idea of oil-centric cooking.

INGREDIENTS: for 4 people
3 globular eggplants
200g stracciatella
250g black lentils
2 cucumbers
120ml coratina "Don Gioacchino" monovarietal oil by Sabino Leone
100ml extra virgin olive oil for frying 1 sprig of lavender
Wild fennel
Lemon balm
Salt
Pepper
PREPARATION
Soak the lentils the day before in water with a pinch of salt. After at least 15 hours have passed divide them into 2 parts, one part will be dried and the other put to boil with new water (not the one where they were soaking).
Fry the dried lentils in hot oil until crisp, pat dry and salt them. Wash and cut the stem off the eggplants, pierce them with a knife and cook them in a foil-lined dish in the microwave for 12 to 15 minutes. Meanwhile, make a mince of lemon balm and wild fennel. As soon as the eggplant is cool, peel it and with a knife cut it into tartare. Season it with the "Don Gioacchino" , the chopped lemon balm and fennel, salt and pepper. Allow to rest in the refrigerator. Wash and peel the cucumbers, centrifuge them with the addition of salt and a few fresh lavender flowers. Refrigerate.
IMPLEMENTATION
In a deep dish make two quenelles of eggplant tartare helping yourself with two equal spoons, lay the fried lentils on top(they will serve to give crispness and flavor), at the bottom put the boiled ones with the stracciatella on the side. Finish with a drizzle of Sabino Leone's Don Gioacchino DOP oil and the lavender cucumber extract. Enjoy!
