L’OTTOBRATICO – Frantoio OLEARIA SAN GIORGIO

An evocative name of the cultivar from which it originates, the Ottobratica. Excellent interpretation of this autochthonous variety with small and elongated olives, this oil impresses the eye with its golden yellow color. Its scent is delicate, never taken for granted, vigorous and persistent and stimulates the imagination with its hints of fresh grass, ripe apple and undergrowth. In the mouth bitter and spicy are contained and balanced; the closure is sweet almond. It loves to be used for frying. Amazing “its” olive oil ice cream. Perfect for mayonnaise. At the table enhances steamed crustaceans, boiled fish and grilled white meats. Indispensable with first courses with egg mushrooms.

46° PARALLELO – Frantoio AGRARIA RIVA DEL GARDA

Created only by the native cultivar Casaliva. A medium-light fruity oil with an intense yellow color with light green shades. The nose exudes elegant aromas of aromatic herbs and almonds. The aromatic perceptions continue in the mouth. Then, they invade the palate, a slight hint of bitterness, given by polyphenols, and strong spicy notes. It claims its roots also in the pairings releasing at best its personality with the gastronomic excellences of the territory, from lake fish to salted meat up to Trentino’s. Vegetable lovers will enjoy it with roast radicchio, cooked vegetables, chicory, vegetarian lasagna.

PRIMO – Frantoio CUTRERA

An oil that immediately declares its cultivar Tonda Iblea. Intensely harmonious, balanced, decidedly versatile. A fruity, fresh scent, with exuberant notes of green tomato and fresh herbs, just cut. In the mouth it is full-bodied with a bitterness and spicy perfectly balanced. A full flavor, tempting that fascinates with herbaceous notes. It emphasizes the roasts, makes the bruschette more refined and seductive salads. Unparalleled ingredient with fish. Capable of making haute-couture a tomato sauce.

IL SINCERO – Frantoio VIOLA

It comes from the Moraiolo, the oldest cultivar of this land, expressing its truest soul. An extra virgin olive oil with extraordinary complexity and elegance. It has an emerald green color with golden reflections; at the nose is broad and complex, characterized by vegetal notes of wild herbs, with hints of artichoke and hints of mint. The taste is fine and character, with tones of wild thistle, chicory, sweet almond, black pepper and cinnamon. Strong bitterness, strong and persistent spiciness. In the kitchen enhances legume soups, excellent on grilled meats and game on the spit. It goes well with mature cheeses, ideal on orange and mandarin sorbets.

VILLA MAGRA GRAND CRU – Frantoio FRANCI

Frantoio Franci’s absolute excellence, top of elegance, complexity, structure and persistence. Obtained only from the best olives of the Frantoio variety, produced in numbered bottles. At the nose is elegant and complex, embellished with floral and black cherry nuances that open to fresh notes of green almond, kiwi and artichoke; the taste is broad, sweet in the opening, pleasant bitter charge and well dosed, spicy progressively growing, excellent harmony and complexity, long persistence of aromatic notes. To be used raw on tuna and salmon tartare; beans, chickpeas and vegetable soups; on red meat or very tasty fish; in combination with fresh cheese, excellent on tortelli with ricotta and spinach, rice or pasta in white with parmesan flakes.

CORATINA – Frantoio MIMÌ

Autochthonous Apulian cultivar, Coratina gives a strong EVO oil, with a fragrant taste, a perfect balance of fruity, bitter and spicy. An intense green color, enveloping fruity nose reveals strong hints of leaf and artichoke and elegant spicy notes. The mouthfeel has powerful vegetal notes of leafy vegetables, fresh almond and wild chicory. The fluidity of the palate is optimal. Divine on a simple bruschetta, surprising on a cooked cream, sublime in all the dishes of the Apulian tradition starting from the soup of broad beans with chicory.
