It was 1979 when Michele di Gaetano decided to leave Milan together with his wife Marina and move to the province of Livorno to realize their dream: creating a farm. Fonte di Foiano’s 1979 bears the name of that year to celebrate this central moment in the history of the mill. The oil is a monovarietal of the Frantoio variety. A broad and enveloping age, rich in vegetal scents which are accompanied by balsamic tones. Strong bitterness and pungency are present and well expressed.

Ideal on octopus appetizers, meat carpaccio with porcini mushrooms, tomatoes au gratin, bean soups, first courses with sausage, grilled tuna, red meat or roast game, hard cheeses. Excellent for seasoning raw cold and hot dishes with a robust structure. For medium/long cooking at high temperature.
